Excerpt from the introduction: “This is a book about the cookery of vegetables of all sorts, including fruits served as an accompaniment to meat or fish, or as a separate vegetable course, and also flowers treated in a variety of ways. It is not a book written for vegetarians. I do not pretend to encourage, in the smallest degree, abstinence from food of animal origin, for many of the following recipes could not be carried out without the sustaining broth made from the stewed flesh of bird and beast.

Book is in acceptable condition, there is some pronounced tanning and some foxing throughout. There is the signature of the previous owner on the first page in pencil.
